This description is for Daucus carota: Daucus carota or wild carrot grows up to a metre in height, with umbrella shaped clusters of pink buds which open out into white flowers and an edible root. Eventually the seed heads detach from the plant and tumble across the ground to spread their seeds. The root of this species must be eaten when it is young as it gets too woody to eat as it ages. The flower heads can also be fried and eaten, they have a carrot-like flavour. It will grow in poor, dry and infertile soil. It will also grow well in chalky soil and coastal areas. It wont grow in the shade so make sure it has a sunny spot.
